Does anyone have advise on adding a gypsy onto the windlass so it can work with chain? Is it possible or do you have to replace with a new windlass. Right now its just a capstan that can retrieve line. I've seen many capstans chewed up by chain. Is that the norm for this windlass?

I had the same question. According to Will Vrooman, sales manager for Vetus Maxwell, there is no kit to replace the capstan on the Maxwell 500 VC with a chain gypsy. He says the only alternative these days is to replace the entire windlass with a model VW10.
